- 2 stalks celery chopped
- 2 large shallots, diced
- 1 can diced tomatoes
- 4 c vegetable broth
- 1/2 c pasta (I used ditali, but any small pasta variety)
- 1 tsp oregano
- 1 tsp basil
- 1 tsp parsley
- 1 cup frozen mixed vegetables
Throw all the above in your instant pot. Pressure cook for 10 minutes. Let naturally release. That’s it.
