- 1 cup black beans cooked and drained or 1 can black beans, drained and rinsed
- 1/4 cup minced red onion
- 1 tsp minced garlic
- 1/2 tsp ground cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/8 tsp ground cayenne
- 1 egg, beaten
- 1/2 cup bread crumbs
- 2 tbsp oil
Puree 3/4 cup black beans in food processor. In medium bowl, mix black bean puree and all ingredients expect oil. Heat oil in skillet. You want it just smoking and use a medium to high heat to get a good crisp. Use 1/3 c measure cup to measure out mixture. Dump “patty” into pan and use back side of measuring scoop to squish down to form a nice patty that is about 1/4 inch thick, maybe slightly thicker depending how you like your burgers.
I served on a brioche bun, but any bun would work with this. I also topped with sharp cheddar at the end of cooking.
