- corn removed from 3 ears of corn on the cob (I used grilled corn, but any will work, but it should be cold)
- 1/2 cup cooked black beans, drained and chilled
- 1 cup cooked quinoa, chilled (I used tri-color)
- 2 stalks celery chopped fine
- 1`shallot, diced
- 1/2 cup diced yellow, red, and/or orange bell peppers (I used the mini sweet peppers)
- 2 tsp salt
- 1 tbsp lime juice
- 2 tbsp extra virgin olive oil
Mix and eat.
