Black bean, Corn & Quinoa Salad

  • corn removed from 3 ears of corn on the cob (I used grilled corn, but any will work, but it should be cold)
  • 1/2 cup cooked black beans, drained and chilled
  • 1 cup cooked quinoa, chilled (I used tri-color)
  • 2 stalks celery chopped fine
  • 1`shallot, diced
  • 1/2 cup diced yellow, red, and/or orange bell peppers (I used the mini sweet peppers)
  • 2 tsp salt
  • 1 tbsp lime juice
  • 2 tbsp extra virgin olive oil

Mix and eat.
