I made these as mini muffins, but you can make them in any muffin size you prefer. I have not tried making it in loaf form, but I fear the moistness would not work well in such large form.
- 1/2 c butter, softened
- 1 tsp vanilla
- 1/2 c sugar
- 1/4 c brown sugar
- 3 very over-ripe bananas
- 1 c applesauce
- 1/2 c AP flour
- 1 c garbanzo flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp all spice
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1 c chopped walnuts
Preheat oven to 375 degrees. Greese muffin cups and set aside. Using stand mixer or hand mixer, whisk butter, vanilla, brown sugar and banana together. Add apple sauce and blend. Add AP flour and mix. In a separate bowl, mix all remaining ingredients except walnuts and mix together. Add this to your mixer and mix until well blended. Stir in walnuts. Pour mixture into muffin cups and cook 15-20 minutes for mini, 20-25 for larger muffins, until lightly browned and they spring back when gently pressed in the center. Cool on wire rack.
