These are a fan favorite of my very picky 9 year old vegetarian. They are packed with protein and vitamins, so I am happy to let her eat them all she wants!
- 3 cups (any ratio) shredded zucchini, carrot and apple
- 4 eggs
- 1 cup sugar
- 3/4 cup vegetable oil
- 2 tsp vanilla
- 2 cups garbanzo flour
- 1 cup AP flour
- 1/4 cup chia seeds
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp salt
- 1 cup nuts (optional, any variety you like in baked goods)
- 1 cup dried fruit (Optional, any variety you like. We are big fans of cranberries)
Preheat oven to 350 degrees. Mix zucchini, carrot, apple mixture with eggs, sugar, oil and vanilla. Add all dry ingredient except nuts and berries. Mix thoroughly. Stir in nuts and berries. Pour into greased muffin pans or lined muffin cups. Bake at 350 degrees for 20-25 minutes depending on your oven.
