Lentil Sloppy Joes

  • 1/2 lb dried green lentils
  • 1 red onion, diced
  • 2 tbsp minced garlic
  • 2 tbsp chili powder
  • 1 tsp paprika
  • 1 tbsp soy sauce
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 can tomato sauce
  • 1 can diced green chilis
  • 1 1/2 c vegetable broth (divided)
  • 2 tbsp olive oil

Heat olive oil in dutch oven. Saute onions 1-2 minutes. Add all spices and continue to saute about 2 more minutes until very aromatic. Add lentils, tomatoe sauce, soy sauce, chilis and 1 c vegetable broth. Heat to a boil and reduce and allow to simmer. Simmer until cooks down to about 2/3 liquid. Add remaining broth and continue to simmer. Total simmer time will be about an hour. Sloppy Joes are ready when lentils are fully cooked and volume has reduced to about half. It will be pretty thick. Simmering longer increases thickness.

We served these on brioche buns with colby jack cheese slices. I’ve heard some people like things like pickles or avocado. While I find that gross, do your sloppy joe your way!
