- 2 tbsp olive oil
- 1 large shallot, diced
- 3 tsp minced garlic
- 1/2 tsp red pepper flakes
- 1/2 cup vodka
- 14.5 oz can diced tomatoes with basil and garlic
- 14.5 oz can tomato sauce
- 1 lb uncooked penne
- 4 cups water
- 1 1/2 tsp salt
- 1 tsp pepper
- 1/2 cup heavy cream
- 1/2 cup grated parmesan
- 1/2 chopped basil
This recipe is done using an instant pot, but if you don’t have one, it can be adapted by adjusting the cooking time and using a large pot with a lid.
Set Instant Pot on saute setting. Once heated, add oil and then add shallot and garlic. Saute 1-2 minutes until shallots start to become translucent. Add red pepper flakes and saute another minute. Add vodka and saute 2-3 minutes to reduce. Add tomatoes, tomato sauce, penne, water, salt and pepper. Lock lid onto Instant Pot and change settigng to Pressure Cook and adjust time to 8 minutes. When time ends, release pressure. Open instant pot and stir in cream, paremesan and basil.
