Instant Pot Cajun Style Dirty Rice

  • 1 lb chicken livers cut into 1/2 inch pieces
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 large red onion diced
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 2 tsp oregano
  • 2 tsp thyme
  • 2 tsp basil
  • 1 tsp parsley
  • 2 tsp pepper
  • 2 tbsp paprika
  • 1 tbsp siracha
  • 2 tsp cumin
  • 2 cups rice (I used Jasmine, but any long grain rice works)
  • 3 1/2 cups chicken broth
  • 3 red, orange or yellow bell peppers (I used one of each. You can add green if it doesn’t hurt your stomach like mine)
  • frozen mixed veggies (I use about 12 oz, but it’s flexible, so whatever ratio of veggies to meat you want)

Brown chicken, beef and pork in instant pot using saute function with the onion and garlic. Add all other ingredients except frozen veggies and change pot to rice setting. When it finishes, use the quick release function. Then stir in frozen veggies and give it 5-10 minutes on the warm setting. We love to serve ours with shredded cheddar!

**If you don’t have an instant pot, this can be made in a Dutch oven on the stove top. Just bring to a boil after adding the ingredients to the browned meat and then turn down to a simmer and put a lid on it. It’ll take it about 45 minutes to cook the rice. Also wait to put the siracha and veggies in until the last 10 minutes of cooking.
