Instant Pot Black Bean and Barley Soup

  • 1/2 lb black beans (soaked)
  • 1 c barley
  • 2 c chopped celery
  • 2 yellow onions diced
  • 6 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 14 oz diced tomatoes
  • 6 c vegetable broth
  • 3 bay leaves

If you don’t have an instant pot, you can make this in a dutch oven, but allow more time. Add all ingredients to instant pot. Set to pressure for 10 minutes. Use natural release method to release pressure.
