**This recipe was adapted from a recipe from the Food Network
- 2 c sugar
- 1/2 c plant milk (I used oat milk)
- 1 stick vegan butter (1/4 lb)
- 1/4 c Dutch cocoa powder
- 3 c old fashioned rolled oats
- 1 c smooth peanut butter
- 1 tbsp vanilla extract
- 1/2 tsp salt
Lay out a sheet of parchment paper on your counter or table.
Heat sugar, milk, butter and cocoa powder in a medium sauce pan until boiling. Allow to boil 1-2 minutes. You can test if it’s ready by dropping a small amount into a cold cup of water. If it floats, it’s ready. If it all sinks, let it boil a little longer.
Turn off heat and add peanut butter, vanilla and salt and stir until well incorporated. Add oats and stir to combine.
Drop spoonfuls of the mixture about 2 inches apart onto parchment paper. You can make these as small as a teaspoon or as big as about 2 tbsps. I like mine big. Allow them to cool for 30 minutes, then refrigerate overnight.
