- 1/2 c Dutch cocoa powder
- 1/2 c + 2 tbsp boiling water
- 8 oz semi-sweet chocolate chips (I used mini)
- 1/2 c + 2 tbsp olive oil
- 4 tbsp melted, unsalted butter
- 2 large eggs + 2 egg yolks
- 2 tsp vanilla extract
- 2 1/2 c sugar
- 2 1/2 c all purpose flour
- 1 tsp salt
- 8 oz peanut butter chips/morsels
Adjust oven rack to center position and preheat oven to 350 degrees. Lightly grease 13×9-inch pan with butter or cooking spray and set aside.
In stand mixer, whisk cocoa and boiling water together until mixed. Add the chocolate chips and whisk until fully melted. Whisk in the oil and butter. Add the eggs and vanilla and continue whisking until smooth. Whisk in sugar. Lift stand mixer and wait a few minutes for all of the chocolate mixture to drip off. Using a spatula, stir in flour and salt until fully incorporated. Then stir in peanut butter chips. Pour entire mixer into your prepared pan and place in oven. Bake 35-50 minutes depending on your oven. It is done when the center is starting to firm and you can insert a toothpick about 2 inches from the outer edge of the pan and it comes out with just a bit of crumbs. Set on wire rack and allow to fully cool before cutting.
This recipe makes about 15 brownies.
