Cheesy Scalloped Potatoes

  • 2 lbs yukon gold potatoes sliced in 1/4 in slices
  • 1/2 large yellow onion, sliced
  • 1 1/2 cups heavy cream
  • 1 stick butter
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups grated parmesan
  • 1 cup shredded cheddar
  • 1/3 cup bread crumbs

In a sauce pan, melt butter and add heavy cream. When heated, add 1 cup Parmesan and cheddar. Sit until melted. Layer potatoes and onion slices in casserole dish. Add 1/3 sauce mixture. Add layer of potatoes and onions and another third of sauce. Add last layer of potatoes and remaining sauce. Bake, covered, at 350 degrees for one hour. Mix 1 cup parmesan with bread crumbs. Top potatoes with mixture. Cook 20 minutes until golden brown. Let rest 5-10 minutes before serving.

This is awesome served with almost any meat dish, though I prefer it with smoked chicken!
