Breakfast Sausage

  • 1 1/2 lbs ground pork
  • 1tbsp sage
  • 1tsp red pepper flakes
  • 1/2 tsp ground red pepper
  • 2 tsp oregano
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tsp pepper

Mix all ingredients until well mixed, but try not to overwork the meat. Cover and let stand in refrigerate 1 hour to overnight. I typically patty it out and make fry the sausage patties in a saute pan, but you can also cook it ground for making sausage gravy.
