- 1 1/2 cups shredded zuchini
- 4 small overripened bananas
- 3 eggs
- 1 tsp vanilla
- 1/2 cup sugar
- 2 cups garbonzo bean flour
- 1 cup all-purpose flour
- 1 tsp baking soda
- 2 tsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp salt
- 3/4 cup rough chopped pecans
Mix zuchini, bananas, eggs, sugar and vanilla until you have a creamy mixture. Mix in all remaining ingredients except pecans until all is blended. Stir in pecans. This recipe will make 12 muffins and a small loaf. Bake at 350 degrees. Muffins take about 15 minutes. Loaf will take about 20 minutes. They are ready when slightly browned and bounce back if you press the center.
