- 1/2 cup Yancey’s Fancy Horseradish and Bacon Cheddar Cheese shredded (I’m sure other brands make a similar flavor, but this one is delicious)
- 1 refrigerated pie crust, allowed to reach room temperature
- 4 eggs
Preheat oven to 450 degrees. Spray a baking sheet with non-stick oil or coat with a thin layer of olive oil. Roll out the pie crust and use a fork to poke holes in about 3-4 places. Sprinkle cheese all around crust, being sure to get to edges. Fold about 1 inch of the edges in on itself. Bake 5-6 minutes. Remove from oven and crack eggs on top. Bake 5-10 minutes depending on how done you like your eggs. I recommend checking every couple of minutes starting at 5 minutes to see how “jiggly” the whites are to get them the way you like. Let stand 2-3 minutes. Sprinkle with pepper and serve.
